Cheesy Bean Quesadillas

Quesadillas are awesome because you can fill them with almost anything and they'll still taste amazing. This melty cheese and black bean recipe is one of our favourites - but feel free to mix it up!

Cheesy Bean Quesadillas

Ingredients

1 tbsp oil

1 small onion

1 red pepper

100g kidney beans (drained)

60g grated cheese

4 flour tortilla wraps

salt and pepper

Let's cook

Start by preparing the filling. Find a frying pan with a large base and put it on the heat. Add a drizzle of oil and let it warm up. Chop up the onion and pepper into slices and add it to the pan. Let it cook for about 5 minutes before throwing in the beans (make sure you drain them first) and any other fillings you’ve got - maybe some sweetcorn, cooked vegetables or shredded meat. Season with salt and pepper and cook for a further 3 minutes.

Scoop all the filling into a bowl and wipe the frying pan clean. Get it back on the heat and add another drizzle of oil, before carefully laying a tortilla in the pan. Scatter some grated cheese and add a put a scoop of the filling to half the tortilla.

Let it cook for about 1 minutes before flipping it over to brown the other side. Repeat with the remaining quesadillas.
