1 red pepper
1 red onion
1 clove garlic
1 tbsp oil
1 handful cherry tomatoes
200g tinned chopped tomatoes
Heat your oven up to 200°C. Chop the red pepper into chunks, making sure to remove all the seeds and flesh. Thickly slice the courgette and roughly chop up the red onion. Peel and roughly chop the garlic. Chuck it all into an ovenproof dish or roasting tray, drizzle with olive oil and get it in the oven. It will need to roast for 20 minutes.
Remove the tray from the oven and add both the cherry tomatoes and chopped tomatoes. Mix everything together, season with salt and pepper, then place the sausages on top.
Return to the oven for a further 15 - 20 minutes. It’s ready to serve when the sausages are cooked through and browned.
